taco salad

i’ve been making these for my wife and i for the past couple of days. they’re quick and delicious.

Ingredients:

  • fake meat (i’ve used vegan ground beef and chicken strips)
  • spinach
  • baby bok choy
  • chard
  • olives
  • tomato
  • bell peppers
  • beans (i’ve used black and pinto and my wife likes garbanzo)
  • salsa (i prefer salsa verde but you can use whatever you prefer)
  • avocado

Directions:

  • in a skillet over med high heat cook the fake meat
  • mix the spinach, bok choy and chard in a bowl
  • dice the tomato, olives, avocado and peppers and place in the bowl
  • add the beans next
  • add the salsa
  • when the meat is done place on top of the salsa and enjoy
