just made these for dinner and they were awesome
Ingredients:
2 gardein breaded chicken strips
1/2 cup diced cabbage
1/4 cup diced bell pepper
1/4 cup diced onion
1 tbl veganaise
2 pita pockets
seasonings of choice ( i used dried thyme, oregano, cayenne pepper and all spice)
Directions:
In the oven or toaster oven cook the chicken until it’s fully warmed and as crispy as you like
In a medium pan mix the onion and pepper and cook for 2-3 minutes
Add the chicken and cabbage to the pan and mix and season everything
Cook for an additional 2-3 minutes
Mix with the veganise and combine well
Warm up the pita pockets and fill with the chicken salad

so things have been a little off lately. my wife has started talking and hanging out with her ex again and the whole situation is making me uncomfortable. he wants some sort of super intense friendship that is just short of dating and it makes me uneasy.
my gf search has pretty much stopped. i haven’t had much luck in finding women i’m interested much less getting them to talk to me. maybe things will go better tomorrow night since i’m going out for the first time in a while. it’s hard to find a secondary when you’re married and while i get why it’s that way, it is a little frustrating.
i’ve been doing more cooking. last night i made some fried tofu for the first time and if i had seasoned it, it would have come out amazing. i’ve also mastered the art of making damn good fried rice :) so go me. i think next i’m going to work on sweet and sour vegetables.
i turned 28 last week. i feel old sometimes lol. we’re going to San Francisco on sat for the day so that will be a lot of fun. it’ll be nice to get out of town for the weekend.
